As I wandered down the garden the other day on my way to feed the chickens and collect their eggs, I looked up into the tangle of brambles that continually threatens to overpower our fence and noticed the first delicate pale pink flowers had opened. This set me to thinking…. blackberries in a couple of months, so I need to use up any frozen ones left from last year’s bumper crop.
Heading back into the house with four fresh eggs in my container (the hens are laying well, four eggs daily – we eat a lot of eggs!!), I wondered if there was any way to combine blackberries and eggs into something delicious? After a quick rummage through my recipe collection I came up with a recipe for Cherry Clafoutis which I remembered was rather nice. And why not substitute blackberries for cherries? I thought. So I did! If you’d like to make your own using any kind of berries then the recipe is as follows…..
Blackberry Clafoutis
Pre-heat your oven to 180C
Mix together 60g plain flour, 1/2 teaspoon baking powder, 3 large eggs, 60g sugar, 300ml milk, a pinch of salt and 1/2 teaspoon vanilla essence in a blender or food processor (or a stick blender works for me) until totally smooth and leave to stand for 20-30 minutes.
Meanwhile, grease a 25cm round baking dish with butter, then sprinkle over a tablespoon of sugar. Sprinkle 300g blackberries over the base of the dish, then place in the oven for 5 minutes so they begin to soften.
Remove the dish from the oven and pour over the batter. Return to oven and bake for half an hour or until puffy and golden.
I like to serve warm (not hot) with a big dollop of cream on top so that it runs down into the clafoutis as you cut slices from it.
