Here at Bustle & Sew we absolutely love to bake and when baby Isla was born we knew we wanted to bake something to celebrate her arrival. So, who better to turn to than the Queen of baking herself…Mary Berry! We found the recipe for these fork biscuits in ‘Mary Berry’s Ultimate Cake Book’ and they were so quick and easy to make. Even better, they only required 3 ingredients! Rather than flatten the biscuits with a fork we rolled the dough and cut into shapes with pastry cutters.
To make 6 rather large biscuits (like ours!) you will need:
100g (4oz) of butter, softened
50g (2oz) Caster Sugar
150g (5oz) Self Raising Flour
Pack of ready to roll icing
Apricot Jam
Step one: Preheat the oven to 180°C/fan 160°C/gas 4. Lightly butter your baking tray.
Step two: Measure the butter into a bowl and beat to soften. Gradually beat in the sugar and then the flour (we used our Kitchen Aid). Bring the mixture together with your hands to form a dough. Roll the dough on a floury surface and cut into shapes using pastry cutters.
Step 3: Bake in the preheated oven for around 15 minutes until a very pale golden. Lift off the baking tray and leave to cool completely on a wire rack.
Step 4: While the biscuits are cooling roll out your icing – we just used a pack of pink ready to roll fondant icing from Tesco. Using your cutters (we used these ones) cut out the shapes and stamp your messages on the icing.
Step 5: Thinly spread Apricot Jam on the top of your biscuits (so the icing sticks) and place your icing shapes on top. Gently pat down and leave to set.
These biscuits make lovely gifts whatever the occasion – super tasty and so quick and easy to make! Wrap in pretty tissue paper or gift in celophane bags tied up with twine.
